பரோட்டா பிரியர்களுக்கு ஓர் எச்சரிக்கை


தினமும் இரவு பரோட்டா சாப்பிட்டால் தான் சாப்பிட்ட திருப்த்தி
கிடைக்கிறதா?

இன்று தமிழகம் முழுவதும் பரவலாக காணபடுகிறது பரோட்டா கடை ,அந்த பரோடாவும் ஊருக்கு ஊர் எத்தனை வகை ,அளவிலும் சுவையிலும் எத்தனை வேறுபாடு
விருதுநகர் பரோட்டா ,தூத்துக்குடி பரோட்டா ,கொத்து பரோட்டா ,சில்லி பரோட்டா ,சொல்லும்போதே நாவில் நீர் ஊருமே .                                                    
பரோட்டாவின் கதை என்ன தெரியுமா 

பரோட்டா என்பது மைதாவால் செய்யப்படும் உணவாகும். இது தமிழகம்  எங்கும் கிடைக்கிறது. இரண்டாம் உலகப் போரின் போது ஏற்பட்ட கோதுமைப் பற்றாக்குறையால், மைதா மாவினால் செய்யப்பட்ட உணவுகள் தமிழகத்தில் பரவலாகப் பயன்படத் தொடங்கின; பரோட்டாவும் பிரபலமடைந்தது. 
பரோட்டா பொதுவாக எப்படி செய்வார்கள்?
மைதா மாவுல உப்பு போட்டு, தண்ணி விட்டு பிசைஞ்சு, அப்புறம் எண்ணெய் விட்டு, உருட்டி, ஒவ்வொரு உருண்டையையும் தட்டி, அடித்து, பெரிய கைக்குட்டை போல் பறக்க விட்டு, அதை அப்படியே சுருட்டி, திரும்ப வட்ட வடிவில் உருட்டி, தோசைக்கல்லில் போடுவார்கள்.



இப்போது பரோட்டாவின் மூலபொருளான மைதாவில் தான் பிரச்சனை துடங்குகிறது.
பரோட்டா மட்டும் இல்லது இன்னும் பல வகை உணவு வகைகள் இந்த கொடிய மைதா வில் இருந்து தயாரிக்கபடுகிறது ,நம் பிறந்த நாளுக்கு கொண்டாட வாங்கும் கேக் உட்பட .

மைதா எப்படி தயாரிகிறார்கள் ?

நன்றாக மாவாக அரைக பற்ற கோதுமை மாவு மஞ்சள் நிறத்தில் இருக்கும் அதை பனசாயல் பெரோசிடே (benzoyl peroxide ) என்னும் ரசாயினம் கொண்டு வெண்மை யாகுகிறார்கள்,அதுவே மைதா .


Benzoyl peroxide நாம் முடியில் அடிக்கும் டை யில் உள்ள ரசாயினம்
இந்த ராசாயினம் மாவில் உள்ள protein உடன் சேர்ந்து நிரழிவு க்கு காரணியாய் அமைகிறது .


இது தவிர Alloxan என்னும் ராசாயினம் மாவை மிருதுவாக கலகபடுகிறது மேலும்  Artificial colors, Mineral oils, Taste Makers, Preservatives , Sugar, Saccarine , Ajinomotto  போன்ற உப பொருட்களும் சேர்க்க படுகிறது ,இது மைதாவை இன்னும் அபயகரமகுகிறது .


இதில் Alloxan சோதனை கூடத்தில் எலிகளுக்கு நிரழிவு நோய் வரவைபதற்கு பயன்படுகிறது ,ஆக பரோட்டா வில் உள்ள Alloxan மனிதனுக்கும் நிரழிவு வர துணை புரிகிறது .
  
மேலும் மைதாவில் செய்யும் பரோட்டா சீரணத்துக்கு உகந்தது அல்ல ,மைதாவில் நார் சத்து கிடையாது , நார் சத்து இல்லா உணவு நம் சிரண சக்தியை குறைத்து விடும் .


இதில் சத்துகள் எதுவும் இல்லை குழந்தைகளுக்கு இதனால் அதிக பாதிப்பு உள்ளது , எனவே குழந்தைகளை மைதா வினால் செய்த bakery பண்டங்களை உன்ன தவிர்பது நல்லது.

Europe union,UK,China  இந்த மைதா பொருட்கள் விற்க தடை விதித்துள்ளன .


மைதா நாம் உட்கொள்ளும் போது சிறுநிரக கள் ,இருதய கோளறு ,நிரழிவு போன்றவை வருவதற்கு பல வாய்ப்புகள் உண்டு .
நமது அண்டை மாநிலமான கேரளத்தில் பரோட்டாவின் தீமைகள் குறித்து இப்போதே பிரச்சாரம் செய்ய தொடங்கி விடனர்.மேலும் மைதாவை அதன் தீமைகள் குறித்து ஆராச்சி செய்து ஆய்வறிக்கையும் சமர்ப்பித்துள்ளனர்.


இப்போது ஆவது  நாமும் விளித்து கொள்வோம் நம் தலைமுறை காப்போம்.

நண்பர்களே ஆரோக்கியமான நம் பாரம்பரிய கேப்பை, கேள்விறகு ,கம்பு உட்கொண்டு அந்நிய உணவான பரோட்டாவை புறம் தள்ளுவோம் .

  14. மைதா உணவுகள் தமிழகம் முழுதும் பெருகி விட்ட நிலையில் மக்கள் விழிப்புணர்வு பெற வேண்டும்... நமது தென் மாநிலங்கள் தவிர வட மாநிலங்களில் மைதா பண்டங்களை காணமுடிவதில்லை. தமிழக மக்கள் விழிப்புனர்வு பெறுவார்களா...

    in the beginning itself the author said that maida is substitute of wheat at second wrold war. it means maida is not came from wheat. maida is product of tapioca.

  21. u say in europe and US banned??? u r joking, i dont belive this. the most daily food in america and europe is bread & pasta which is from baking flour. people who hav diabets can avoid this and take atta flour. because it has more calorie. then what about cakes, biscuits? what about Rice? it doesn't hav suger??? it has 40% suger. so there is no problem taking parotta some times. but any food u take continuously and excessive could lead to danger to health. Don't panic the public my dear.

  22. @ Rahmathulla Flour is no longer bleached in the UK. The bleaching of flour with benzoyl peroxide was permitted until 1997.China banned recently on around march 2011.

  23. Actually unbleached flour is better for you than bleached flour. Bleached flour contains traces of bromides, the bleaching agent. It also does not have the nutrients that unbleached does.
    Studies show that alloxan,destroys the beta cells of the pancreas. You may be devastating your pancreas and putting yourself at risk for diabetes, all for the sake of eating taste bleached flour. If you eat flour, your best choice is unbleached.

  25. There are two variants:
    1. Parota - Uses Maida
    2. Paratha - Uses Wheat
    The one made in Tamil Nadu primarily belongs to Parota, which is very unhealthy. This includes both Kerala and Ceylon(Veechu)
    The North Indians make Parathas which has a wheat subsititue.

  32. I have two doubts after reading the article, pls help me clarify ...

    1. Earlier in the article it is said that due to scarcity of wheat they produced maidha .. in that case how maidha could be a derivative of wheat ??? ironical.
    2. Wheat is expensive than maidha in market, then how come maidha is cheaper than wheat when it is wheat+benzoyl peroxide ?!

    "The two additives, benzoyl peroxide and calcium peroxide, were banned because "there is no need to use them in flour processing anymore" as the country's processing techniques and wheat planting had improved"

    so they are not using the product which is used to bleach the flour, so we cant say that china has banned the maida, they have banned due to that two additives chemicals and more over in that they have said that wheat planting had improved that shows they are getting ready to export wheat by planting it for their purpose as well has to develope their country revenue, but in India nowadays plantation is going down, ok back to the topic apart from it, we need to know how maida is prepared? In different regions they may prepare as in their style, may be some small scale industry in business motive like adding chemicals for pure white color some thing like that they may prepare as illustrated above in this blogpost what ever it may be if you do really care about your health you need to track how that maida is prepared where ever you are buying near by your area, iam not meaning in hotel, may be you can check from which company they do supply maida in your local area and call their customer care and know the details, and can post it here so that others people also may know it, if you came across they use banned additives you can aware other people also and you people also can avoid it,

    Dear friends what ever it may be, many products are by additive of some chemical products, even our daily use tooth paste also has some chemical products [but those who don't brush they no need worry...], so better spend some time and google the ingredients which ever product you are using even soap also has some chemical ingredients, different people use different soap so do google and check about the products ingredients and be aware of that products,

    1. Hi sorry to offend anyone. read the blog but the information provided is half true. we have too reached heights in flour milling. maida, rava and atta are prepared from wheat. These products are got from various stages of flour milling. yes benzyol peroxide is used but it is also used in vanaspathi and other vegetable fats. maida has less fibre but some mills use vitamins to enhance the flour. but India will too improve its process and stop using these chemicals.for information inner part is rava, outermost is bran, layer after bran is Atta(flour mixed with bran thats y the colour), the next layer forms maida. it is naturally white in colour. the flour of maravalli kilangu is not maida. and no customer care will educate u regarding their process. parotta shud not be consumed everday excessively like rice. u know north indians with diabetics are adviced to take rice products to control it. some north indians get stomach upset by idly.

      If u question me for ur information I worked with Naga Group of industries who r leaders in Tamil Nadu Flour milling field. even though their retail presence is less they r the key RM suppliers for many biscuit companies. If u r buying a brand please check if they own a flour mill. Many popular brands in TN just buy from different flour mills and mix them up for consistency. So u will surely end up in benzyol peroxide.
